Kurt and I made this cauliflower soup recipe last week and I forgot just how delicious it is! I know right now meat can be a little hard to find, at least it still is in Chicago. They are limiting how much you can buy per visit so you kind of have to get creative if you are used to eating a lot of protein.
We love to eat soups, mostly because you can throw everything into a crockpot and let it cook. And you normally have enough for at least a few nights of dinners. And not to mention, soups are healthy for you with all those veggies.
This cauliflower soup recipe is defiantly one of our favs! My mom and dad were the ones who actually told us about it. And Kurt loves anything cauliflower so we had to try it out. It’s incredibly hearty and filling and so flavorful. I actually think it tastes even better the next day so make sure you make enough for left overs! I’m typically not a huge fan of cauliflower, but I love this soup. It has such a good flavor to it, so try it out even if you aren’t the biggest fan.
The recipe calls for fresh cauliflower heads, but we have also bought the frozen kind that are already diced and its just as delicious and not to mention a lot easier. We always top ours with a little extra cheese and a few dashes of hot sauce. The hot sauce is key! It add so much flavor and a little zest.
Typically we make ours in a saucepan over the stove, but I’ve been dying to add this Le Creuset Dutch Oven to my collection. Its a good excuse to make this cauliflower soup recipe haha! If you are getting married, please register for one. I kind of regret not adding a dutch oven to our registry because I thought they were a bit excessive, but we would use it all the time!
